As far as underrated public servants go, sanitation workers must be one of the most under-appreciated (albeit often well-compensated). Sanitation work is physically demanding, disgusting, and they have a higher on-the-job fatality rate then police or firefighters (BLS). I would also contend that the work is more important to modern society than any other job. Crime, education, and putting out fires are secondary concerns if you're wading neck deep through garbage acquiring every disease in the book. Plus, I doubt garbage men get laid that often: "I really wanna go home with a garbage man" said no woman ever.
So the next time you see your garbage man, give him a hug...Never mind he's gross. Just fist bump him then sanitize your knuckles.
